Ingredients needed

You will love the simple ingredient list to make these no bake cookie dough bites. If you’ve ever made one of my healthy desserts before, you probably already have everything on hand. Here is what you’ll need: 

  • Almond flour. I used blanched almond flour. Regular almond flour works, but it will be darker in color. 
  • Maple Syrup. Adds sweetness and keep these super fudgy. 
  • Coconut Oil. Coconut oil helps hold the cookie dough bites together. 
  • Chocolate Chips of choice. 

Start by adding the coconut oil and maple syrup to a microwave-safe bowl. Microwave for 2o seconds until the coconut oil has melted and whisk together.

Next, add the almond flour and mix until a thick dough remains. Using a rubber spatula, fold through the chocolate chips.

Now, using a cookie scoop or hands, form 2o-30 small balls of dough and place them on a lined plate. Refrigerate for at least 30 minutes until they have firmed up.

Tips to make the best recipe

  • If your batter is too thin, add some extra almond flour to thicken. If the batter is too crumbly and difficult to form into balls, add a dash of coconut or almond milk to it.
  • To form uniform balls, lightly wet your hands and form into balls yourself. 
  • Reserve a handful of chocolate chips to roll the balls in, to ensure each one is full of chocolate chips. 

Dietary swaps and substitutions

The beauty of these cookie dough balls is that they are so easy to adapt to a plethora of diets or eating styles. Here is what we’ve tested: 

  • Cut the carbs. Swap out the syrup and chocolate chips for keto maple syrup and sugar free chocolate chips.
  • Make it nut free. If you have an almond allergy, swap out the almond flour for oat flour
  • Swap out the syrup. Both agave nectar and honey works just as well as maple syrup. 
  • Add mix-ins. Fold through chopped chocolate, nuts, seeds, or even candy bits. 
  • Use butter. If you aren’t a fan of coconut oil, swap it out for softened butter.

  • To store: These can be stored at room temperature, in a sealed container, for up to 5 days. The cookie dough balls are best stored in the fridge, as they will remain thick, chewy and fudgy. They will keep fresh for up to 2 months. 
  • To freeze: Place the cookie dough bites in a ziplock bag or in a shallow container. Frozen cookie dough bites will keep for up to 6 months.
