Granola has become my side piece. My lover. I could eat it day and night. And have. Want to know what a great late night snack is? THIS GRANOLA. Bet you didn’t see that coming. I’ve been a fan of granola ever since I met it paired with some GORP (also know as trail mix when not around super hippie people). But my high school was filled with hippies. We weren’t far from Boulder. Therefore, I ate GORP. And our trail mix/GORP situation had big clusters of granola in it. You know what pairs REALLY well with granola? Peanuts (and peanut M&Ms, but that’s not the point I’m trying to get across). So you know what I did? You guessed it, you genius human! I made peanut butter granola. And it’s a thing of beauty.

As I type this, I’m currently leaning back on the couch with a baby attached to my teat like a barnacle that refuses to let go of the side of a boat. If only my younger self could see me now, she would have never believed what she saw. A dirty kitchen, a breastfeeding woman who hasn’t even washed her face by noon, and a living room filled with burp cloths and swaddles. But what I think young Juli would be most surprised by is that older Juli is quite content with this new life. Sure, I would prefer the kitchen to be clean, but this peanut butter granola recipe comes first! You, the unknown reader on the other side of the screen, comes first. Kind of. Not really. But you get what I’m trying to do here.

They say that when you give birth, you give birth to two people – your child and the new version of you. And they ain’t lying! You really do become a new person. And it’s so freaking cool! I am a very different person in just 6 short weeks. And I can’t wait to see where this version of Juli goes. But while I blossom into this new person, I also have to figure out my new rhythm in life. Especially a new schedule. I told Brian that I now completely understand why people have house managers. Having someone who could cook healthy meals, and clean, and help me navigate this new space while I work from home and care for Avery…well that would be AWESOME. And I’m sure that sounds extremely pretentious and privileged to some, which is fair, but to me that sounds GLORIOUS. Not in our budget, but still…GLORIOUS. If you have a house manager, please tell me every detail about this so I can live vicariously through you. That being said, I just got Avery down for a nap and I feel like a rockstar so I’m off to bust out some more work!

Peanut Butter Granola

  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 4 cups 1x
    1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
    2. In a large bowl, mix together maple syrup, peanut butter, butter, cinnamon, vanilla extract, and cinnamon. Once combined, add oats and salt then mix until completely coated.
    3. Pour onto baking sheet, spread oats into a flat layer and press into the parchment paper. This will make it nice and chunky once cooled. Place in the oven to bake for 10 minutes, turn baking sheet, then bake for another 10 minutes. Once done baking, let cool COMPLETELY on the baking sheet. Once cooled, break into chunks.
    4. Eat by itself or in a bowl of your milk of choice!
