Paleo Breakfast Pizza -with Mitch

Ingredients:

1.5lb Beef Chorizo (or any other beef sausage)
3 Med Sweet Potatoes
2 Large Garden Tomatoes
2 Large White Onions
1 Green Pepper
2 Red Peppers
3 Hatch or Poblano Peppers
5 Garlic Cloves Minced
15 Large Eggs
2 Cups Sliced Mushrooms
10 Olives, halved

Slice all veggies (dice tomatoes)
Bake sweet potatoes inf oven until squishy (or until toothpick comes out clean)
Add little bit of oil and garlic into a large pan, roasting garlic.
Brown Chorizo, then drain and separate for later.

Place following in pan:
Onions, peppers (red, green, hatch), mushrooms.
Cook for a few minutes while mixing.

Add sweet potatoes, then tomatoes, then sausage.

Place olives on top.

Pour eggs.

Cook on stove-top until center is done (outside edges can still be liquid)

Place uncovered pan in oven at 400 degrees for ~15 minutes checking every 5 minutes.

Cool for a few minutes, then slice as desired.

Enjoy with salsa, pico de gallo, or on its own.
