This moist and delicious banana bread couldn’t be easier to make. There is no need to measure anything precisely, and you can choose whatever add-ins you like!
Ingredients:
– 3-4 ripe bananas
– 1-2 tbsp ghee or coconut oil
– 2-3 eggs (I usually use 1 fewer eggs than the amount of bananas, so for 4 bananas I use 3 eggs)
– dash of vanilla
– pinch of salt
– a sprinkle of cardamom
– a dusting of cinnamon
– a pinch of maca powder (optional)
– 1/4 -1/3 cup coconut flour (sifted)
– 1/4- 1/3 cup cacao (sifted)
– Tsp of baking powder
– 1/3 -1/2 bar of chocolate, chopped
– A handful of nuts, chopped (pecans, walnuts, pistachios, etc)

The main thing remember about using coconut flour in a recipe like this is that it absorbs a fair amount of liquid. If you find that your batter is looking a bit dry, you can add a splash of milk, applesauce, coconut milk or even water to thin it out.
Once you get used to “rustic” baking like this without a recipe, you’ll begin to notice when something is the right consistency or too runny/dry.
