Here’s a VERY easy dinner that tastes amazing!! And it’s Paleo, AIP compliant, Gluten/Grain free, Dairy free, Refined Sugar free, Soy free, Nut free, Egg free, and Organic!
First, start out by throwing in 3-4 pounds of boneless, skinless organic chicken breast in your crockpot on high for 3 hours. I like to drizzle a light layer of olive oil in between each piece of chicken; and I heavily spice up each piece of chicken as well. I’ll link my favorite Paleo/AIP spice blends below.
Next, while the chicken is cooking in the crockpot I throw in 3-4 pounds of organic white sweet potatoes (or any type of sweet potato) in the oven on 400 degrees F for about an hour. I don’t do anything to the potatoes other than throwing them on a cookie sheet. If the potatoes aren’t super soft I’ll cook them for another 20 mins. Be sure to let the potatoes fully cool before you rip the skins off and cut them up into bite size pieces; you’ll have plenty of time to do this because the chicken takes 3 hours.
Lastly, once the chicken is done and the potatoes are cooled I sauté my organic cauliflower rice and organic mixed mushrooms in a large pan on medium high heat with organic extra virgin olive oil. I season with several organic spices. This time I used about a 1/2 of teaspoons of: turmeric, parsley, ginger, tarragon, oregano, basil, sage, rosemary, and thyme. I also add about a tablespoon of pink sea salt and garlic powder (I continuously add these two as I’m sautéing the dish). It takes about 2-3 minutes for the cauliflower rice and mushrooms to fully cook. Then you just add in as much crockpot chicken and sweet potatoes as you like. Give it all one more sprinkle of salt and one more big mix; then you’re ready to serve.
Pro-tip: You can totally save time by making your chicken and sweet potatoes in advance. I almost always make both every Sunday; so I have both fully cooked and ready to go all week long.
