Time for delicious Blueberry Banana Bread! It’s even better the second day 🙂

Plus the recipe is…Paleo, AIP, Gluten-free/Grain-free, Dairy-free, Organic, Nut-free, Soy-free, Refined Sugar-free, and Egg-free!!

3 gelatin eggs (*use 3 eggs if you’re not on the AIP diet)

3 large overripe bananas

1/4 of coconut oil

1/4 cup of maple syrup

2/3 cup + 1 tbsp of coconut flour

1/4 cup of tapioca or arrowroot flour

3/4 tsp of cream of tartar & 3/4 tsp of baking soda (or 1 and a 1/2 tsp of gluten free baking powder if you’re not on the AIP diet)

1 tsp of non-alcoholic vanilla extract


1.) Mash up 2 bananas in a large bowl.

2.) Now add in the rest of the wet ingredients and mix well.

3.) Add in your dry ingredients and mix again (except the blueberries).

4.) Lastly, add the blueberries and do a light fold over so the blueberries stay in tact.

5.) Slice the third banana in half and press it into the top of the dough (optional).

6.) Now bake at 350 degrees F for 35-45 minutes. Please note it took me 75 minutes for the middle to cook and I still had to let it cool completely to finish baking/setting. It will taste much better, as well, if you let it totally cool. I find you won’t taste the gelatin eggs once it’s room temperature. And it’s even better the next day.


For every gelatin egg mix 1/4 cup of water with one tablespoon of gelatin powder. Let the two ingredients set in a small sauce pan for less than 5 minutes to form the gelatin. Then melt the saucepan for up to 30 seconds on the stovetop to melt the gelatin into an egg-like consistency.
